Those who visit Oaxaca are obliged to taste its exquisite food. Oaxaca cuisine is one of the most delicious in Mexico and the world. It has one of the most varied selections of foods in which the pre-Hispanic ingredients are fundamental.

Who doesn't know black mole? One of the most traditional dishes, however there are six other varieties of mole.

Of course the chiles rellenos stand out as well as the quesillo (string cheese), the tlayudas (giant tortillas), tamales, nieves (homemade ice-cream), fresh fruit waters, the famous hot chocolate, the delicious tasajo, and cecina (thinly sliced beef or pork steak).

And you can't miss the wonderful traditional sweets and the egg yoke bread that are the indispensable companion of the world class coffee or hot chocolate.

The most unusual dish is the legendary chapulines (dry roasted grasshoppers), it is said that those who try them will always return to Oaxaca.
